I would cook it with the bone in.Put in a pan that can be sealed up tight with tinfoil add 2 cups of water with two tablespoons of red wine vinagar.Put it on early in the morning and let it cook slow most of the day.It will fall apart. You can add salt and pepper and garlic or your favorite spices as well.
Cook slow and long.

My boss is giving me a leg of deer and I have never got venison this way before. I have cooked the tenderloin before, but not a whole leg. Should I take the meat off first? Or cook in bone in?
Any suggestions meant to be helpful are appreciated!
